Cooking your rice in a bit of lime juice lifts the flavor and makes it a perfect side for a Mexican meal.

Add the lime juice, water, and rice to a pot. 1/8 of the fluid should be lime juice, and 7/8 should be water. There should be twice as much fluid by volume as dry rice.
Raise to a boil, then simmer until the rice has absorbed the liquid. The rice should double in volume from its uncooked state.

Chop the cilantro. There should be about 1/2 as much cilantro as dry rice by volume.

Once the rice is done cooking, stir in the chopped cilantro. The leaves should wilt in the hot rice.
